Above you will find the coffee farm of Doña Hermida in Los Tornos on the dirt road up into the Tilaran mountains. Hermida's farm is polyculture, which means that she uses a variety of different crops to rejuvenate the soil, reduce the need for pesticides, and create a healthy habitat for pollinators and symbiotic species. An alternative to monocultures like pineapple and palm oil plantations, polycultures do not encourage the destruction of primary or regenerating forest; on the contrary, polyculture farms utilize pre-existing forest as windbreaks and living fences, allowing the important habitats to remain and encouraging local residential fauna, rather than eliminating it.
